What can there be to say about toast? It seems so simple that it doesn’t need an introduction. It goes without saying that toast is one of the easiest meals to prepare…it’s a piece toast! It’s something that you pop in your mouth as you’re running out the door late for work, or as a midnight snack after a night out. Maybe we’ve become a little too blasé about the humble toast though, it’s so unrefined and overlooked. We can all agree that some simple peanut butter on toast is always a winner, but what we’re presenting for you here is toast that you can really sit back and enjoy in the same way you would a plate of waffles or pancakes. We’ve taken four of our favourite simple toast toppings, and elevated them for you.
01. PEANUT BUTTER AND BANANA
This is one of Charlie’s all-time favourite toasts. He likes the salty-sweet earthiness of the peanut butter combined with the sweet fruitiness of the banana. To help bring out the earthy depth in the peanut butter we’ve added cinnamon and almond flakes, and to elevate the sweetness we’ve topped it with blueberries and drizzled of some maple syrup. He particularly loves this in the mornings as a breakfast treat. Even better if you have it on our easy vegan french toast.
Here’s what you’ll need:
- peanut butter

- maple syrup
- almond flakes
02. VEGAN YOGHURT AND PISTACHIOS
I only tried vegan yoghurt on toast for the first time around a year ago, and this quickly became one of my favourites. This is one of those toasts that is good for any time of the day. I personally prefer it as a breakfast, but it would also make a delicious afternoon treat. Cover the toast with your favourite vegan yoghurt and then top with raspberries. Crush up some pistachios and sprinkle on the top with some desiccated coconut. You could stop there, but to make it even more of a treat, I love to drizzle on a little maple syrup!

03. SMASHED AVOCADO
The classic avo toast is everyone’s favourite! I personally love the creaminess of the smashed avocado. To pimp this one up, it requires a little more cooking. We think roasted chickpeas are the perfect crunchy protein-packed accompaniment to the avocado. To roast them, drain a can of chickpeas and rinse with cold water. Then place them onto a baking tray and cover with a glug of oil, a couple of generous pinches of paprika, and some salt and pepper to taste. Place into the oven at 180 for around 15-20 mins. They will turn a deep golden brown colour and roast up crunchy. We add this straight on top of the avo toast and then top with harissa, sunflower seeds and some peppery fresh lamb’s lettuce.

04. VEGAN CREAM CHEESE AND CUCUMBER
Charlie’s choice for the savoury category is one he loves to eat on special occasions. If I ever ask him what he wants as a birthday breakfast, his answer is always vegan cream cheese and cucumber on a bagel/croissant/bread of some description. It’s all about balancing the cool vegan cream cheese and cucumber with the peppery radish and black pepper. For extra freshness, top with some dill and then for a little texture we like to add some sesame seeds.

Just writing this post and thinking about all this delicious toast is making my stomach grumble! However, before we all go and take a toast break, the best thing you can do to make the best possible toast is to start with the best possible bread. In the case of these pictures, Charlie had handily made a fresh white loaf the day before. He loves to bake, but let’s just say he’s no Paul Hollywood… His bread works well for our photos, but for me, nothing beats a fresh sourdough loaf! Now, if you’ll excuse me, I think my toast just popped…
