If you’ve read our post about how to throw a vegan dinner party, then you’ll already know how much we love cooking plant based food for our friends and family. There’s always something so exciting in the moments before our guests arrive, a sense of hurried anticipation in the air as we finalise the last little details, all before the doorbell rings. I think the best advice to take away from that post is to have a menu that you have tried and tested before. I find that planning ahead, especially testing meals in advance, always builds the excitement and anticipation. This easy vegan Bolognese sauce that we’ve finally taken the time to write up, is exactly the dish we served in that post.
This is one of those recipes that is just so simple to make, even though it seems to have lots of ingredients, it all goes into one pan and slowly cooks, enhancing all the flavours over time. However, this dish is not just perfect for a big group dinner, but also perfect for any weekday meal. We like to cook this up in big batches and freeze some so we always have a tasty home-cooked meal ready in the freezer.
The flavours in this sauce are so deep and rich, although this may sound like a good description of a hearty winter dish, we love eating this food in summer too! Whenever I eat this dish I immediately feel transported to Italy, as I imagine myself sitting in some old square on a balmy summers evening, tucking into a delicious bowl of pasta.
We’ve tried a couple of different vegan minces from plenty of supermarkets, but we are yet to find anything that bests Tesco’s meat-free mince. The pasta in this dish is important too. I know a Bolognese sauce from the classic dish that my mum used to make; Spaghetti Bolognese. However, we’ve have been informed by Charlie’s friend, a trusted source from Bologna itself, that a Bolognese sauce should be eaten with tagliatelle, not spaghetti!
One thing that is a total bonus is that the veggie mince we are using doesn’t need to be cooked for ages like meat mince. Due to this, the recipe that we present here has been optimised to cook as quickly as it can whilst still tasting amazing. If you really want to take your time though, you can cook it slowly on a lower heat for hours, leaving you with a much deeper and richer flavour.
Easy Vegan Bolognese Sauce
- 1 onion finely chopped
- 3 garlic cloves finely chopped
- 1 pinch salt pepper
- 2 medium carrots finely chopped
- 2 sticks of celery finely chopped
- 5 medium-large sun-dried tomatoes roughly chopped
- 450 g (1 bag) soya mince
- 400 g can of chopped tomatoes
- 3 tbsp tomato puree
- 300 ml vegetable stock
- 1 cup red wine
- 1/4 cup balsamic vinegar
- 1 tsp dried oregano
- 1 tsp dried basil
- 1 tsp dried thyme
- 1 tsp dried parsley
- 1 sprig of fresh basil
- Heat some oil in a large pan, then add the onion and garlic with some salt and pepper and fry for around 3 minutes until the onions are soft. Then add the finely chopped carrot and celery and stir together cooking for about 7 minutes. Next, add in the sun-dried tomatoes and the soya mince and cook until soft for 5 minutes.
- Once the soya mince has cooked through add in the tin of tomatoes, tomato puree and stock and simmer for 10 minutes. Then add in the red wine & balsamic vinegar and herbs (parsley, thyme, oregano, basil) and cook for a further 10
- Now put your pasta on to cook, and leave the bolognese to cook on a low heat for around 15 minutes. Just before you serve stir in some fresh basil leaves, leaving a few to garnish with.
