For such an easy recipe, this butter bean mash recipe really packs in the flavour. The garlic and lemon are a delicious combo with the earthiness of the butter beans. I particularly love how smooth and creamy this mash is; it’s such a satisfying dish.
Butter bean mash is one of our classic go-to easy dinner additions
We often made this as a swap for mashed potato or if we want to boost the protein content of a dinner. It goes so well with all sorts of foods; one of our favourites is to have it with pan-fried aubergine and courgette rounds. It would also be totally at home in a buddha bowl and as a side with a Sunday roast dinner.

If I ever get distracted by preparing another dish and let this dry out, I know I can simply revive it. I just add an extra splash of almond milk and mash it back up. It goes right back to its lovely smooth and creamy texture.

Creamy Lemon & Garlic Butter Bean Mash
Ingredients
- 1 400g can butter beans
- 1/2 a lemon juice
- 1 large garlic clove
- 2 tbsp dairy-free butter
- 4 tbsp almond milk
- 1/2 tsp salt
- 1/4 tsp pepper
Method
- Add 1 tbsp of dairy-free butter and the garlic to a pan, and gently fry.
- Add in butter beans and cook for 10 mins till softened. Now add in the almond milk, the remaining 1 tbsp of dairy-free butter, lemon juice, salt and pepper, then mash.
